Deb’s Salmon Patty with Truffle
These Salmon Patties are delish and easy to make. Children and adults love them. You can have them alone, or with salad, rice or other vegetables. If you have made too many you can always freeze to use for a meal another time.
Ingredients
· Large tin of any salmon (or tuna) remove soft bones & flake up.
· 6-7 medium potatoes, peeled & boiled, well drained & mashed.
· 2 eggs
· Chopped parsley, chives or dried dill.
· 1 onion finely diced
· Panko breadcrumbs
· Truffle salt & pepper
Makes 12-14 patties.
Steps
1. In a large mixing bowl, place the salmon, mashed potato, herbs, onion and only 1 egg & then season well with salt and pepper - mix together until well combined.
2. Take balls of mixture (make sure you roll them firmly - bigger than a golf ball) then dip in the remaining egg (beaten) and then roll in the breadcrumbs.
3. When ready heat up the fry pan - mixture of olive oil and butter and fry off both sides in small batches. Flatten them in the pan with the spatula to form a nice patty. Do this gently as you want them to keep their shape.
4. Serve with lemon wedge and sprinkle of yummy truffle salt!
5. Can also be served with a seafood sauce and a salad or greens.
Note: if the mix is sloppy, the mash potato is too wet or too much of it, so try and drain it well.
