Fresh Black Truffle Carbonara Pasta
In Australia you can source Fresh Black Winter Truffles as you would expect in Winter. Alternatively, you can also source Fresh Truffles in Summer, known as Summer Truffles. They too are delicious and have a lovely aroma. For this recipe we used fresh black winter truffles.
Ingredients
- 250 grams Pasta (we used Rigatoni you can use your preferred pasta)
- 4 tablespoons Pecorino Cheese
- 2 eggs
- 2 tablespoons of Butter
- Pinch of salt (truffle salt if you have some)
- 40 grams Black winter truffles
* Makes pasta for 4 people
Steps for cooking
1. Boil your water with a generous amount of salt and add your pasta once boiling. Boil pasta for 10 mins or until cooked. Coordinate the boiling of your pasta with having your truffle and cheese and egg mixture ready to mix with the hot steamy cooked pasta.
2. Finely slice, grate or chop the fresh truffle. Add to a fry pan with the butter and heat. You may like to leave aside some truffle shavings for decoration when serving. Leave aside.
3. In a medium size bowl crack and add the two raw eggs, with a pinch of salt and 3 tablespoons of the pecorino cheese. Mix the ingredients together.
4. When ready add the egg & cheese mixture to the hot steamy pasta. Then add the truffle and butter mixture.
5. Serve up and sprinkle the remaining truffles and pecorino cheese over the pasta to create your delicious fresh black truffle carbonara pasta.
This pasta can be enjoyed by young and old alike.
