Simple & Delightful Black Truffle Pasta
If you have fresh truffle, it is wonderful for this simple recipe. If you do not have fresh truffle, you can use truffle oil and/or truffle salt to bring this dish to life anytime of the year.
Ingredients
- 500-gram bag of your favorite pasta
- 2/3 cup of good butter
- 1/2 cup of good quality freshly grated parmesan cheese
- 1-2 fresh black truffles (in season if available)
- Truffle salt
- Truffle oil
- Herbs (optional)
If you are Not Cooking with Fresh Truffle, we recommend that you cook your pasta as you normally would. Then add your drained pasta to pan and mix with truffle oil (or butter), ½ cup of parmesan cheese and a teaspoon of truffle salt. Add additional salt, parmesan cheese and herbs as you like.
Steps for cooking with fresh truffle
1. Cook the 500grams of your favourite good quality pasta al dente. Be sure to leave 100ml of the pasta cooking water aside for the sauce if you are using fresh truffle.
2. Grate the ½ cu of parmesan cheese and set it aside.
3. Cube the butter and set it aside.
4. Grate 2/3 of the truffles and set them aside if you are using fresh truffle
5. In a large pan on medium heat add the 75ml of the pasta cooking water and 1/3 of the cubed butter and heat up. Then turn the heat down to low and stir gently until the mixture emulsifies. Then add the add the ½ cup of grated parmesan.
6. Once the sauce is smooth, add the grated truffles and another splash of the cooking water. Stir gently, turn off the heat and let the sauce infuse for a minute or so while you drain the pasta.
7. Add the pasta to the pan and stir to combine
8. Serve the pasta with the remaining black truffles shaved on top of the dish. Add herbs and additional parmesan.
