Moorish Truffle Honey & Pecan Biscuits

If you have Truffle Honey, this is a delicious Moorish biscuit recipe that will have everyone wanting more. They perfectly compliment a hot beverage, a glass of milk, or a creamy or fruity dessert.  

Truffle Honey Poached Pears

Ingredients

-          175 grams of unsalted butter

-          3/4 cup brown sugar 

-          1/4 cup truffle honey (ideally 5% truffle honey)

-          Pinch of salt (truffle salt if you have some)

-          1 tsp vanilla extract / essence

-          1 egg

-          2 cups self-raising flour

-          Small packet of pecan nuts (or your preferred nuts)

Steps for baking

1.      Put the chopped butter, sugar, truffle honey, salt, and vanilla extract into a microwave safe bowl. Melt on 50% power for 3 -4 minutes stirring every 30 seconds or until the mixture is melted and smooth. Allow to cool down a bit before the next step.

 2.      Then stir in the egg and the self-raising flour (via a sieve). You will find that the mixture becomes warm and sticky)

 3.      Cool the mixture in the fridge for 1 hour

 4.      Preheat oven to 180 degrees Celsius (fan forced oven)

 5.      Prepare flat baking tray/s with baking paper

 6.      After 1 hour in the fridge take the mixture out and roll or spoon into balls using a teaspoon or tablespoon depending on if you want small or large biscuits. Add the balls to the baking tray and use a fork to flatten and ad a pecan nut to the top. You can also mix the nuts through the mixture if you prefer. (The mixture will make 12 large biscuits or 24 small biscuits.)

 7.      Cook for 8-10 minutes. Be sure to keep an eye on them as they cook quickly. You want them golden.

8.      Cool the tray down for 10 minutes + before taking out and transferring to a wire rack to cool completely, then enjoy with a cup of tea or coffee.
