Creamy Linguine Truffle & Bacon Pasta
While fresh black winter truffles are always the best to add to your creamy linguini truffle & bacon pasta, given the truffle season is so short (winter only) you can still enjoy a delicious truffle pasta any time of year. This recipe is simple to make and tastes amazing.
Ingredients
- Packet Linguine Pasta (250-300grams)
- Black Truffle Oil (2 tablespoons)
- Australian Bacon (200grams)
- Fresh Cream (1 cup)
- Parmesan Cheese (1/2 cup)
- Australian Garlic (2-3 cloves minced)
- Fresh herbs for dressing the dish

Steps for cooking
1. Boil your water with a generous amount of salt, some olive oil and add your Linguine once boiling. Boil the Linguine for 10 mins or until cooked. Strain your pasta and keep around ½ cup of the pasta water for adding later.
2. Dice your bacon and add to a hot fry pan. Cook until crispy. Set aside to add to the dish later.
3. In the same fry pan added the minced garlic and fry briefly before adding your cream and truffle oil. Mix and simmer for a few minutes.
4. Once your sauce is simmering add the parmesan cheese and mix through ensuring the cheese is melted.
5. Add your strained Linguine and the crispy bacon to the creamy sauce in the pan and mix through.
6. Decorate with fresh herbs if you wish. Serve with a lovely side salad and garlic bread.
